You can prepare the rice in your regular way (using pressure cooker, rice maker, etc) but make it a point to add cinnamon, cardamom, and cloves in it so that their flavor nicely gets mixed with the rice. Then add water as per the quantity given above. As the rice is getting cooked, we will start our preparations for our gravy.
Take spinach, coriander leaves, mint leaves, coconut and green chillies and blend it into a smooth paste by using little water. Once done, keep it aside.
Now we will begin with the main part of making our pulao.
Take a pan of medium or large size and add oil to it.
Once the oil becomes hot, add cumin seeds.
After the cumin seeds began to crackle, add onion and ginger garlic paste. Sauté it till it cooks.
Now we have to add the prepared paste/gravy and let it get cook for a few minutes.
We will now add boiled green peas, red chilli powder, garam masala and salt and mix it properly with our gravy.
Now it’s time, to add whisked curd to give our pulao a creamy flavor and let it cook for few minutes.
Lastly, add cooked rice and mix it properly with the gravy. See to that the all of the rice gets coated with the gravy.
Our ‘Greeny peas Pulao’ is done. Garnish it with deep fried onions and serve hot.
You can add ½ cup paneer (cottage cheese) instead of ½ cup green peas to make a ‘Greeny Paneer Pulao’.
You may vary the proportion of red chilli powder and garam masala according to your taste.
The paste can be prepared one day prior to cooking. Just store it into an airtight container and place it into the refrigerator.
