Cauliflower Tikka Masala

‘Paneer Tikka masala is very popular and favorite Punjabi dish among Indians as well as Indian food lovers overseas. The mouthwatering tikka masala gravy is made using fresh tomatoes, onions and yogurt. This savory is rich in its taste and heavy as we all know, paneer is a good source of weight gain.

So I decided, why not enjoy the flavorful tikka masala gravy but in a healthy way. That’s when I invented a modified version of Paneer Tikka Masala, ‘Cauliflower Tikka Masala’. Cauliflower Tikka Masala is prepared the same way as Paneer Tikka Masala but it is very nutritious as cauliflower is healthier alternative to paneer.

Cauliflower Tikka Masala

Ingredients – 

For Cauliflower Tikka –

Cauliflower Florets 300 grams

Onion (diced) 1 big

Whisked Curd 6 tbsp

Ginger Garlic Paste 2 tsp               

Red Chili Powder 1 tbsp

Turmeric Powder 1 tsp

Garam Masala Powder 1-2 tsp

Tandoori Masala Powder (optional) 1-2 tsp

Kasuri Methi 1-2 tsp

Corn flour 2-3 tbsp

Lemon juice 1 tsp

Salt to taste

Oil 2-3 tbsp

For the Tikka Masala Gravy –

Tomatoes 3 (medium size)

Onion 2 (medium size)

Ginger Garlic Paste 2 tsp

Whisked Curd 3-4 tbsp

Cumin Powder 1 tsp

Dhania (Coriander) Powder 1 tsp

Turmeric Powder 1 tsp

Red Chili Powder 2-3 tsp

Garam Masala Powder 1-2 tsp

Tandoori Masala Powder 1-2 tsp

Water ½ cup

Crushed Kasuri Methi 1 tsp

Fresh Cream 3-4 tbsp

Oil 2 tbsp

Salt to taste

Coriander leaves for garnishing (finely chopped)

Method – 

For Cauliflower Tikka

Take a large bowl. Add whisked curd, ginger garlic paste, spice powders, corn flour and salt to it. Mix well. Add cauliflower florets and onion. Mix well and marinate it for 1-2 hours or overnight.

There are two methods of preparing the cauliflower tikkas

The oven method

Thread the cauliflower florets and onions on metal skewers and place them on baking tray or pan. Brush at least 2 tsp oil evenly on cauliflower and onions.

Preheat the oven at 200 C and bake it for 20 – 25 minutes.

The pan method

Heat about 1 tsp oil (add more if required) in pan. Place the threaded cauliflower and onion with metal skewers on the pan. Rotate the skewers as the veggies get cooked.

For tikka masala gravy

Roughly chop the onions and make a smooth paste using little water.

Blanch tomatoes, peel, roughly chop them and make smooth paste.

Keep both onion and tomato puree aside.

Heat oil in a pan and add the onion paste in it. Saute it till it turns golden.

Now add ginger garlic paste and saute.

Add tomato puree and saute it till the oil leaves the sides of the masala.

Add all the spice powders (Cumin Powder, Dhania Powder, Turmeric Powder, Red Chilli Powder, Garam Masala Powder, Tandoori Masala Powder) and mix well.

Now add curd and stir the gravy.

Add water and salt and stir.

Simmer for 5 to 6 minutes till the gravy thickens.

Add fresh cream and kasuri methi and mix.

Now add the cauliflower tikka and mix slowly. Take it off the flame.

Garnish with coriander leaves and serve hot with roti, naan or chapati.

Note:-

You can vary the quantity of red chili powder, garam masala and tandoori masala as per your taste.
