Diwali is only a few days away and everyone is going to be very busy with preparing sweets and snacks for the festival. This year I want to share with you all a unique and quick recipe of Methi Chakli or Chakli using dried fenugreek leaves. This recipe is very simple and will be made with ingredients that are mostly available at home. Just keep in mind that you will need a chakli maker for this recipe.

Rice flour 1 cup
Gram flour 1/2 cup
Turmeric powder 1/4 tsp
Red chili powder 4 tsp
Asafetida ¼ tsp
Sesame seeds 1 tbsp
Carom seeds 1/2 tsp
Cumin seeds 1/2 tsp
Kasuri Methi/Dried fenugreek leaves 1 ½ tbsp
Water 1 cup
Salt as per taste
Oil to deep fry
Preparing the dough –
In a large bowl take the rice flour and gram flour. Add turmeric powder, red chili powder, sesame seeds, asafetida, carom seeds, cumin seeds, dried fenugreek leaves and salt to it. Mix well using a spoon.
Heat water till it starts boiling.
Heat 2 ½ tbsp oil in small pan. Once the oil is hot add it to the mixture and mix it.
Now add the hot water as required and start kneading. Knead and form the dough.
Cover the dough and let it rest from for 30 minutes.
Making the chaklis –
Apply a little water in the chakli maker and add some portion of the dough into it.
Press the lid and move the chakli maker in spiral shape to prepare the chaklis. Make the chaklis on a butter paper or aluminium foil.
Size of the chaklis should not be too big otherwise it will be difficult to fry them.
Heat sufficient oil in a large pan or kadai.
Once the oil heats up add the chaklis in it and deep fry. Fry the chaklis on a low flame so that they become crispy and won’t burn at the same time.
When the chaklis are done place them on an absorbent paper to drain excess oil.
Let the chaklis cool down. Serve or store them in an airtight container.
